What to Eat Wednesdays

First  -- Start Preparing your Chilean Sea Bass
  • 1 tbsp lemon zest
  • 1 small clove garlic finely chopped
  • 2 tbsp flat Italian parsley finely chopped
  • 2 tbsp basil finely chopped
  • 2 tbsp extra virgin olive oil
  • 1 tbsp freshly squeezed lemon juice
  • healthy pinch of kosher salt
Stir together in a bowl and set aside.
Second  -- Make your Two Bean Salad
  • 1  15 1/2  can of kidney beans drained and rinsed
  • 1 15 1/2 can of pink beans drained and rinsed
Toss together in a bowl

  • 3 tbsp red wine vinegar
  • 2 tbsp extra virgin olive oil
  • 1 tbsp sugar
  • 1 healthy pinch of salt
Place in a tightly sealed container and vigorously shake​.  Toss beans with red wine vinaigrette.
  • 1/2 cup chopped basil
Toss with beans, cover with plastic wrap and refrigerate.​

Third  -- Roast your Chilean Sea Bass

Preheat oven to 400 degrees. Gently press herb paste onto Chilean Sea Bass.  Place on a tin foil lined pan and roast for 15-20 minutes depending upon the thickness of the fish.

Fourth -- Plate and Serve your Meal.
Spoon a generous portion of bean salad onto each plate.  Place the herb encrusted Chilean sea bass on top and enjoy!



You know, you eat with your eyes first and this is just so freaking colorful and tasty looking. You know you want to eat this tonight!  Plus, it's healthy and dietetic! 

The bean salad could stay outside and be served at room temperature or be served cold.  I think room temp might be better because it's the base for a hot dish.


Last  -- Serve Dessert
Take oreo cookies, separate them and scrape out the sugar filling.  Take a generous tablespoon of your favorite ice cream and put it between the wafers.  Press down gently so the ice cream oozes to the edge.  Roll the edge in coconut, nuts, mini-chocolate chips.  Whatever tickles your fancy.  Delicious and easy.  



So if you want to be a real crazy person about this and stick with a low cal, low fat dessert you can use reduced fat oreos, no fat frozen yogurt and forget about rolling the cookies in anything.
