Finish the Lamb Chops
Turn the oven off when the oven timer goes off.  Leave the potatoes and lamb chops in the oven and do not open the door.  

Turn the heat to medium under the saute pan  with the butter.  When the butter melts add the chopped fresh rosemary and garlic.  Saute for 1-2 minutes, just until you smell the fragrance of the garlic (do not brown).  Turn off the heat. 

Remove the chops from the oven and put them in the saute pan with the butter and herbs.


Before we talk about serving dinner, I'm going to share a few thoughts about presentation.  When your sweetheart arrives they will see this elegant setting with a lit candle and beautiful bottle of champagne. Everyday dishes at the kitchen counter are given "glam" with sparkling red chargers set underneath the white plates, pretty toile napkins and formal "black tie" roses.  Your message is this is a special celebration for a special person.

If you have to move a place setting so your guest can comfortably visit with you, it's no big deal.  The idea was to set the ambiance.  (Just a note, when you serve the dinner you may remove the chargers entirely or leave them for decoration, it's your choice.)



What I really love about this beautiful place setting is that it was done on a shoestring.  The napkins were $2 each, placemats $3 each, chargers $1.50 each, roses $15 a dozen and ribbon $4.  Twenty-five dollars turns the everyday into the elegant.


Plate and Serve Dinner
Remove the salad plates from the refrigerator, place them at the top or the side of the knife at each place setting.

Pick up the chargers and dinner plates, put the chargers out of the way if you are not using them.

After flipping the lamb chops over in the saute pan once (so each side has some herbed butter), place two lamb chops on each plate.  You can spoon a little of the herbed butter on top if there is any left in the saute pan.

Spoon about 1/6 of the scalloped potatoes onto each plate.  Put the potatoes back in the oven.

Pour the red wine, toast your beautiful (or handsome) dinner guest and enjoy your celebration!


Dessert is a Snap!
A perfect romantic end to this dinner is chocolate truffles and any champagne remaining in the bottle.  Who can resist candy that comes in an exquisite gold box?  If you have berries left over from the salad, put them in the smallest white or glass bowl that you have, set them out beside the gold box and indulge!

If you want to pull out all the stops, ask your mother or grandmother if you can borrow her wedding china and crystal.  You must promise that you will wash the lead crystal and gold edged plates by hand and keep your promise!  Putting them in a dishwasher will damage them.
